Georgia Pacific Catfish Filets

 In Mississippi Bob worked for a company called Georgia Pacific. May have heard it a time or two... Anyways. They had an award winning catfish team and did they make some good catfish. The recipe I took from Monticello Baptist Churches cookbook. It's a keeper of a book and I have enjoyed it through the years.

What you need:
Catfish fillets
Buttermilk
Meal Mix:
5 lbs plain yellow cornmeal
2 1/2 lbs plain flour
1 1/2 cup salt
7/8 cup black pepper
1/8 cup of red pepper

Directions:
Mix cornmeal, flour, salt, black pepper and red pepper together to make meal mix.  This recipe will meal 35 lbs of fish. Unused meal mix can be refrigerated or frozen to be used later.
To fry fish: Cut fillets into strips, 1/2 inch to 1 inch wide. Pour buttermilk  lightly over the fish to coat on all sides. (side note- I soaked mine for 8 hours in the buttermilk- it was awesome) Roll fish in meal mix. Cook at 300-310 degrees for 8-10 min. Use 100% Peanut Oil...
