White Bean Chili

White Bean Chili
Ingredients:
  • Cooked Chicken Breasts (Dice or Shred)
  • One Can Chicken Broth
  • Cilantro (Add as much or as little as you want)
  • Green Chilies or Jalapenos
  • Navy Beans (one can works if you want more add more beans)
  • Onion (one medium)
  • Garlic (for taste)
  • Cumin (for taste)
  • Oregano (for taste)
  • Black Pepper (for taste)
  • Salt (for taste)
  • Lime juice (one whole)
Directions:
  • Cook Onion till tender
  • Cook Chicken shred or cube when fully cooked.
  • Add Broth, white beans, green chilies, cilantro and all your seasonings except lime juice to chicken and onions.
  • Cook till sauce begins to thicken. (Usually 25-30 min on med to low heat)
  • If the sauce does not start to thicken smash/puree a small portion of the chili. This will thicken it up.
  • Squeeze one lime over dish and serve over rice or chips with cheese and sour cream.

Chicken and Rice Casserole.
I found this recipe on Foodnetwork via Paula Dean. Now some may ask.. How many sticks of butter did you put in this? My reply only a tablespoon. Yea.. I am serious.  Now looking at her recipe made we want to add and delete things, but her overall response to this recipe was that it was very tasty. So here is my adapted Chicken Rice Casserole. It's not your traditional one either.
Ingredients:
Cooked Chicken. Now you can either buy a precooked chicken and shred it. Some may say that's cheating. I say When you have three children screaming. Go for it. Tonight I used whole chicken breasts. I cooked them on the skillet with  my favorite seasonings. Garlic, Salt, Pepper and Paprika. Lately Paprika and Chicken go together like bees and honey. But this completely up to you. Either way tastes good.
2 cans of cream of mushroom soup  (forget the calories- the real stuff tastes better)
one small can of diced mushrooms. Fresh is good, but if you are trying to save money. Go aluminum.
one box of Uncle Bens wild rice. Please follow directions. Yes, this is where that tablespoon of butter came into play.
Paula's recipe called for pintos. Mercy and I wrinkled our noses at the taste of it. It's your call. I don't like pimentos unless it's in cheese coated please or olives.
salt and pepper for taste.
Cheddar Cheese. Grated and do be careful. I grated my thumb.. Ouch. (8 oz)
Can Green Beans...
Fried onion topping. Try not to eat the whole container before you top your dish. Yum Yum..
Now you must be thinking this sounds like green bean casserole with chicken. Ding Ding Ding.. I think that is the point. But once you mix your goodies together sticking it in the oven for 30 min on 350 you may find yourself liking the casserole pan. Good Eats!!!

Crusties Crabby Patties

Because I am cheap I use can crab, but you can use the fresh stuff just as easy.
3 cans of crab meat, drained.
2 sleeves of Ritz crackers
green onion
dash of salt
pepper
garlic powder for taste
mix all ingredients and form into patties.
You can bake this at 350 till dark brown (20-25 min) or you can fry this. Either way make sure that the meat is cooked.

Shrimp and Grits

Such a southern classic. It's easy to make.
Ingreediants:
1-1/2 medium shrimp, peeled, devained and tailed. (I cook this separate by adding a little creole seasoning and salt on a pan. Or you can grill this.)
Grits. (Depending on how many people you are feeding will determine how much grits you cook. Follow instructions regaring grits.
8 oz cheddar cheese, grated.

Directions:
Mix cooked shrimp, grits and cheese till melted. Serve with your favorite southern greens, cornbread or eat by it's self. This is quick and easy.

Christina's sobber rum cake

This is an easy crowd pleaser cake.
1 pkg of yellow cake mix
1 pkg (3 1.2 oz) instant vanilla pudding mix
4 eggs
1 cup water
1/2 cup (1 stick) butter soften
2 tablespoon  imitation rum extract
1 cup pecans (optional)

Glaze:
Mix 1/2 cup sugar, 1/4 cup soften butter, 2 tablespoon of water. Bring to a boil and stir for one min. Remove add 1/2 rum extract. Pour over cake.
Directions:
Beat all ingredients and pour into cake pan. Bake 325 degrees for one hour.

Bob's vanilla bean cupcakes

I named this after my husband Bob. He loves vanilla beans.
Ingredients:
1 2/3 cup of all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 stick butter, melted
1 egg
1/4 cup sour cream
1/3 cup milk
1 1/2 teaspoon pure vanilla extract
seeds scraped from one vanilla bean.

Directions:
Mix all wet ingredients and dry ingredients separately. Alternate between wet and dry. Mix well.
Preheat Oven to 350. Line standard muffin tin with cupcake liners. I like fun cupcake liners with designs, but that is just me. Fill liners 3/4 full.
Bake for 15 min or until center of cupcake bounce back when touched. Transfer to wire rack to cool. Place favorite icing for finishing touches.

Jennie's Chicken Cocunut Curry

Chicken broth enough for 4 people to have 2 small bowls of soup
chicken cut in small pieces (I use thigh because it's cheaper)
carrots
onion
mushrooms
potatoes (unless you want the soup over rice which is also good)
can of coconut milk
2t of curry red yellow or green (this is very mild. Add more curry if you think the kids will like more--but my kids like it mild)
Cook chicken in broth with curry. Boil until chicken cooked through.
add veggies and cook until tender.
Add can of coconut milk at the end--do not boil with coconut milk--I don't know what will happen but something bad:)
if I have cilantro in the fridge I add in everyone's bowl. Serve hot. Yummy!

Christina's oven roasted brisket

This is a never fail brisket.
Ingredients:
2 T chili powder, dry mustard and salt
1 T garlic, onion, ground pepper, sugar
2 bay leaf
4 lbs beef brisket, trimmed
1 1/2 cups beef stock

Preheat oven 350
Make dry rub combining all ingredients. Rub on both sides of brisket. Place in oven for one hour uncovered.
Add beef broth and enough water to yield about 1/2 inch liquid in the roasting pan.
lover oven to 300 degrees. Cover brisket tightly and continue cooking for 3 hours or until fork tender.
Note: You can serve this with baked potatoes and bbq sauce for easy fix meals. or you can do the big bbq spread of baked beans, potato salad and bread.

Opal's Floor Sweep Cake

I have been told this recipe is very old...
Ingrediants:
2.5 cups of flour
1 tsp baking soda
1 tsp salt
1 tsp baking powder
1/2 cups crisco
1 1/2 cups of sugar
2 eggs beaten
2 tablespoons of cocoa
1 oz red food coloring
1.25 cup buttermilk

Directions:
sift flour
cream: crisco, sugar and eggs
mix well
add cocoa powder, food coloring and buttermilk
add sifted flour beat well.
grease pan 350 degrees for 30-35 min.

Icing:

The icing can be a little tricky...
Ingreediants:
3 tablespoons flour
1 cup water
1 cup sugar
1/2 lb butter
1 teaspoon of vanilla

Directions:
Boil flour, sugar and water till it is a clear like color. This can be debated on what exactly is clear. (video will come one day.)
Set in fridge for 2 hours.
When cooled add butter and vanilla beat.
Place on top of your cake.
Note: This will be runny and almost cottage cheese consistency. This is very yummy, but you may want to consider placing the cake in the fridge to keep it.

Carol's Cranberry Salad

A new twist to your cranberry sides during the holidays.
2 3 oz lemon jello
1 cup sugar
1 cup boiling water
4 cups of fresh cranberries (ground) (2 packs)
1 orange- unpeeled, seeded and ground
2 large apples- unpeeled, cord and ground
1/2 cup chopped pecans

Directions: Dissolve jello and sugar in boiling water. Add cranberry, orange, apple and pecan and stir well.
Place in a fancy mold. A six cup mold lightly oiled will work.
Place in refrigerator and eat..

Kassie's Pineapple Casserole

1 20 oz can pineapple chunks
3 Tablespoons drained pineapple juice (from a can)
1/2 cup of sugar
3 T Flour
1 cup grated cheddar cheese
Mix all of the above in a 1 qt casserole

Mix 1/3 cup butter, melted
1 stack of Ritz Crackers, crushed.
Sprinkle butter-cracker mixture to top of pineapples.
Bake 350 degrees for 20 min. If you like it crustier bake for a few min longer.)

Gigi's Cornbread

My husband said he wouldn't marry me until I made his mother's cornbread. Needless to say I have been married for ten years. This is an excellent and very healthy cornbread.
1 cup all purpose self rising flour
1/3 cup sugar
1 tsp. baking powder
1 tsp salt
1 cup cornmeal
1/4 cup wheat germ
2 well beaten eggs
1 1/2 cup of milk
1/3 cup cooking oil
Spray a 9X13 pan.
Bake for 25-30 min at 425.

Fruit Tea

2 quarts of tea cold
1 frozen can of pineapple juice
1 frozen can of orange juice
1 frozen can of lemon juice
at least 1/2 cup of sugar. (this is optional)

Mix all ingredients and serve cold. For an extra touch, you can add fresh pineapple, orange slices and lemon slices in your serving pitcher.

Easy Salsa

Ingredients:
4 large tomatoes
couple stalks of green onions
1/2 purple onion
1/2 bell pepper
1/4 cup (or more) cilantro
lime juice (one whole lime- squeezed)
1-2 jalapeno pepper or other favorite spicy pepper
1 tablespoon salt (you will add more salt later for taste)
1 tablespoon of sugar (this is optional)
Directions:
Cut all vegetables either by hand or via food processor. If you use a food processor it will be a wet salsa. If you hand cut vegetables it will be more of a pico de gallo.
Mix all veggies and spices place in a container for at least 8 hours. You may need to adjust your salt or sugar after 8 hours.
Note.. You can add more veggies or delete  depending on how much you want to make.

Breakfast Casserole

What you need:
1 can of crescent roll
cooked and crumbled sausage
green onions
4 eggs beaten
salt pepper
mushrooms
pepper jack cheese (one small bag)
spray 9x13 pan, lay out can of crescent rolls
mix other ingrediants and dump on top of crecent rolls
bake 350-40 min.

and the kids go wee wee all the way home.. Pigs in the blanket

Hot dogs (1 package)
Crescent Rolls(1 1/2 package)
Cheddar Cheese (1/2 slice per hot dog)

Directions
Open package of crescent rolls. Place 1/2 cheddar cheese or other favorite cheese and hot dog, roll up like you would roll a crecent roll together.
Bake 350 for 15 min or until brown.
I serve with honey baked beans. This is sooo easy.. it's a crowd pleaser and it takes me twenty minutes to make. Perfect for those nights that you just don't have time to really cook.

Breakfast Cheesecake

Ingrediants

2 packages of cream cheese. (soften in the mixer)
1 cup sugar
1/3 cup sugar (topping)
1 tablespoon of vanilla
1egg yolk(topping)
1 egg white
2 packages of crescent rolls
pecans (topping)

Mix cream cheese, 1 cup sugar, vanilla, one egg yolk together.
In a 9X13 pan spray with non stick spray. Layer first package of crescent rolls into bottom of pan.
Pour cream cheese mixture on top.
Layer second can of crecent rolls on top.
In a separate bowl. mix egg white, 1/3 cup sugar and pecans together.
Pour on top of second layer of crescent rolls.
Bake 350 for 30-35 min.

Strawberry Cream Cheese Breakfast Cheesecake




Ingredients:

2 package of Pillsbury Crescent Rolls
1 cup of strawberry perserves
8oz cream cheese, room temperature
2 cup of confectioners sugar ***
2 egg
1 tsp vanilla extract
Fresh Strawberries
1 egg + 1 tsp of water for egg wash
350 for 30 min


In a mixer fitted with a paddle attachment, mix cream cheese, sugar, egg, and vanilla. Cream until there are no lumps.

Unroll each crescent roll.lay on the bottom of the casserole pan. Dump cream cheese mixture on top. Add Strawberries. Place Second layer of crescent rolls on top.

Whisk together egg and water for egg wash and brush over each croissant.

Place in oven for 30 min at 350 degrees.

This recipe can be adapted... Instead of strawberries... you could use rasberries and rasberry preserve.
